Preserving the Harvest




So here is one of my many preserving the harvest projects for the summer.  My goal is to can or freeze enough to feed my family through the fall & winter months.  I think last year we accomplished that goal & I hope we will this year too. 

A few weeks ago I had plenty of bell peppers so I decided to flash freeze them.  I sliced some of the smaller ones into pieces (as pictured) & the niceer bigger ones I cut the tops off and froze whole.

Bell Peppers are great in soups, stews, stir fry or use the whole peppers to stuff.

WTF NEWS- July 20th

Turkeys are here!  Yesterday marked the arrival of turkey season with 200 little poults showing up at WTF.  So far, so good but keep your fingers crossed that they all make it to Thanksgiving this year.  See you all at the markets tomorrow.

Happy Friday the 13th!!!  I'm trying to decide whether to lock my self in the house today or find a quiet, secluded spot at the farm to hide.  The past couple Fridays haven't been all that good to me so I'm a lil anxious to see if i make it through today in one piece or without incurring any large expenses.  Let me begin this story by saying that I just bought 6 brand new good quality tires for my truck back in May.  Two weeks ago I was unloading my truck when Domisty walked up and asked "why is your truck hissing?"  Further inspection revealed a nice inch long slice in the sidewall of a tire.  Nowadays, modern technology allows for most holes in tires can be repaired unless they are in the sidewall- Lucky me!!!  The truck got to spend all day at the tire store waiting on the tire to come in (it had to be ordered since they are heavy duty) instead of working so after a missed day of work and $200 we were ready just in time to go to market!  Then last week I was picking up chickens at the processor in Marion NC (1 1/2hrs away) at 4 pm Friday afternoon when- after loading up and icing down the chicken, I go to back up and hear that all too familiar hissing sound and see the front of my truck start to sink, much like my heart.  I had managed to find a 1inch metal rod in the parking lot and once again ripped the sidewall out of a tire.  With the temperature in the mid 90s and given the previous week's experience, this was not where I wanted to be on a Friday afternoon.  Luckily after calling every tire place between Asheville and Statesville a tire was located that was actually the same brand as what is on my truck and only 5 minutes away- now I just had to get it off and over there in the 45 minutes before they closed.  After about 20 minutes of sweating and cussing I finally had the tire off and faced the dilemma of how to get to the store.  Then, just in time, in comes a guardian angel in her white chariot to take me away.  Actually it was Amy Foster from Gilcrest Farms in her brand new white truck and she selflessly offered to use her immaculately clean truck to haul my very dirty tire to be fixed.  She even let me sit up front and enjoy some air conditioning on the way (despite the fact that I was thoroughly soaked in sweat and covered in brake dust).  So within 45 minutes I had relieved myself of another $200 and was on my way home to load up for market. Thanks Amy (and the army of others that got on the phone to help me locate the tire) !!!  So as you can see, given that today is Friday the 13th, perhaps I'd be best served just to stay the hell out of its way......

WTF News- July 6th

Happy belated July 4th to everyone! Nothing like a 4th of July that's hot as a firecracker to let you know summer is here in full force. Of course after hitting 103 + in the past week the mid 90s seem much more bearable. With this kind of weather it seems like a never ending task just keeping fresh water to everything and keeping the wallows nice and muddy for the pigs. I spent several hours Wednesday afternoon hauling hay from a neighbors field and when I returned it seemed that things had started to go awry. When I went to make the evening rounds I found the pigs had given up on rolling in the wallows and were rubbing each other down with BBQ sauce. If that wasn't odd enough, when I got to the hens they were frying bacon in the nest alongside their eggs and the cows were wearing signs that said "medium or well-done". Domisty thinks I really should start drinking more water and maybe it would be a good idea to get out of the heat every so often..... I'm inclined to agree with her.

We should be restocked on chicken tomorrow so come by and stock up!!!

WT News- June 29th

Well I'm back, no multimillion dollar offers or hostile takeover by Paula Deen so it looks like you're stuck with me for a while longer. Hope everyone missed us while we were gone. We managed to sneak away and visit friends and family in Connecticut and New York last week and I've got to admit it was a much needed escape. We didn't get to visit any farms like I had planned but we did manage to harass every small butcher shop between here and Kingston NY which was a blast. It was a lot of fun to walk in & introduce myself as a farmer and then spend the next hour or two touring the shop and talking animals and meat. Add to that getting to go canoeing and staying busy unhooking fish for Rosty & Charlie and it was a great trip. A BIG thanks to our good friends (&WTF Family) Patti & Becky Hubbell for letting us crash at their awesome Sunnywood Resort on Lake Champlain (aka Camp RunAMuck).
