GRAND OPENING- JUNE 25, 2010

The China Grove Farmer's Market will be hosting their Grand Opening on June 25, 2010. The Market is located in the parking lot of the China Grove Roller Mill. The Market is supported by the China Grove Roller Mill along with the China Grove Historical Society.
Many of you have been attending the Market at the Mill since it opened in early May & we appreciate all of those who have come out. I have heard a lot of good feedback from everyone. We hope that the Market continues to grow.
There are currently vendors selling produce, meat, eggs & baked goods.

I guess I spoke too soon last week when I talked about only having 1 resident at the "WTF Hilton". Since our last newsletter we've had about 6 more lambs born, 4 of which we've brought home to bottle feed, and unfortunately only 1 (Cheesecake) of those 4 is still left. I guess this heat is just making it hard for the babies to get a good start on life. It's odd how some lambs never have the first bit of problems and then you turn around and lose a whole set of triplets the next day but I guess that's nature for you. As a farmer you learn to be thankful for what you have and do the best with it that you can.

Website update- Many of you have emailed to let us know that the anti-virus programs on your computer will not let you visit our website. We're sorry for the inconvenience but our host has evidently had their servers hacked and it keeps getting fed through the websites on that server. We're working to get them to fix it but until then please visit us through our blog (http://wildturkeyfarms.blogspot.com/ ) or on facebook.


New Item this week-
Pepperoni!!! If you didn't get one last weekend come pick up some of our fresh pepperoni chubs this weekend. These are perfect for a quick pizza or adding to a fresh salad. Made from our fresh Berkshire pork they are a great treat.

We'll also be restocked on bone in & boneless pork chops as well as hot dogs too so come stock up.

We will be at the China Grove Farmers Market at the Mill Friday from 4-7pm so come see us.

Davidson Farmer's Market (8am-noon). Don't forget that we're in the parking lot of town hall this year so that we can work out of our trailer. This allows us to have a larger volume on hand & better serve everyone. We'll be beside our friends at the Correll Farm so come to "the South End" to stock up on great tasting locally raised natural meats, eggs, and veggies. Our young chickens are starting to lay pretty good but it'll still be a few weeks until we'll have plenty of eggs & stop selling out by 10am . Sorry but until then you'll need to be there early to get eggs.

Domisty will be set up at the Salisbury Farmers Market tomorrow so come find us under the big green tent 7am-noon so come on out and load up on great pork, beef, & goat. She'll be working out of her van with limited space so you are welcome to email us your order today (please do so before about 7pm) to make sure you'll get what you need tomorrow & help her better prepare. If you're interested email us to get an updated product list.

Tips for Cooking Grass Fed Beef

Here are a few recommendations when cooking grass-fed beef.

1. Never use a microwave to thaw your grass fed beef.

2. Bring your grass fed meat to room temperature before cooking.

3. Always pre-heat your oven, pan or grill before cooking grass fed beef.

4. The main reason for tough grass fed beef is overcooking.

5. Steaks are intended for rare to medium cooking. If you like well-done beef, then cook grass fed beef cut in smaller pieces at very low temperatures in a sauce to add moisture.


6. Grass fed beef has high protein and low fat levels. The beef usually will require at least 30% less cooking time and will continue to cook when removed from heat. For this reason, remove the beef from your heat source about 10 degrees before it reaches the desired temperature.

We'll it's mostly been the same ole same ole this week at the farm. We're working hard to keep tractors running, get things planted, and make sure everybody has plenty of water to keep from overheating. A little outside of the norm has been the addition of Poundcake to the family this week.

Those of you that follow WTF on Facebook and our blog have probably heard about Cupcake the lamb. A little over a year ago we rescued Cupcake the lamb from death's door after her mom refused to accept her. She proceeded to spend the next 2 weeks living in our bathroom and being fed by a bottle 3-4 times a day. Well this week we repeated the story with another lamb we've named Poundcake. As the same old story goes, her mom didn't want to feed her so she is now residing in the WTF Hilton (ie our bathroom) enjoying room service 3-4 times a day and an occasional romp around the house while the dog is outside. It's fun to watch her bounce around the house playing with the boys when she's out on her rec break. I guess this means we'll have another lifelong resident at WTF. Gosh! I sure hope we don't end up with a Cheesecake anytime soon.

Rosty & Lee are headed to pick up bacon, breakfast links, and hopefully our prosciutto ham this morning. I'm going to say that we will NOT be at the China Grove Farmers Market at the Mill today since it's a 13 hour round trip down east to do so and we will most likely not be back in time.

Twins

We had twin lambs on Saturday.

Unfortunately, after observing the mom with both lambs it appeared that she was not letting the little girl nurse. Fortunate for the little lamb I have a very tender heart. So she is now a resident of our bathroom being bottle-fed daily and being loved by her "new brothers."



Rosty had breakfast duty this morning.






Last year we had a similar situation with a lamb that the boys named Cupcake. So in keeping with the theme we have named this lamb Poundcake.
By the way, Cupcake is still a resident at the farm. Some days she is just like a dog following you around nosing for attention & other days she just wants to be a sheep and ignores us!
