WTF News- November 1, 2013


Happy Friday!

 

We finally got a chance to get our sorghum cane cut and the sorghum syrup (molasses) made this week!!!  We'll have it available at the farmers markets this weekend.  

 

So you may wonder "Why call it sorghum syrup instead of molasses?"  Sorghum syrup is made from sweet sorghum cane.  True molasses is made from sugar cane.  Though they are similar, sugar cane requires a much longer summer growing season so it's only grown in the lower part of the South (Mississippi, Louisiana, Texas).  Sorghum is is capable of growing in a much shorter season and can be grown much further North.  

 

Both molasses and syrup are made by pressing the juice out of the cane and then boiling off the water until the sweet syrup is left.  Just like honey, properly made molasses/ syrup will last for many years.  True blackstrap molasses/syrup has been cooked off 3 times.  Unfortunately many people call theirs blackstrap because it's dark or black.  The real culprit is that it's been cooked too hot in the final stages and and the sugars have been burnt.  

Come out and give this a try.  It's a great natural syrup for pancakes or mix it with some butter and add it to some homemade biscuits or make some molasses cookies for a sweet treat.

Thanksgiving turkey info- We still have a few birds left if anyone is interested.  This year we expect our turkeys to dress around 15-17lbs on average and the price is $4.99/lb
