CSA Week 1

This is our first week of CSA...yeah!!  One of the best things about the CSA is learning new things to do with the vegetables in your box.  I have learned how to cook a lot of things that I had never heard of before much less knew how to cook.  I will try to post at least 1 recipe every week for one of the items in your box.  Some of these will be recipes that I have posted before but that just means they are tried & true and a WTF favorite.


 
This week we will focus on kale.



According to Wikipedia, kale is a vegetable similar to cabbage, with green or purple leaves, in which the central leaves do not form a head. 
 
 Kales can be classified by leaf type: curly leaved, plain leaved, rape kale, leaf & spear (a cross between curly & plain) & cavalo nero. 
 
Kale is high in beta carotene, Vitamin K, Vitamin C and rich in calcium

One of our favorite recipes for kale is kale chips.  There are various recipes you can use but they are all basically the same recipe.  You just need to adjust your cooking time based on the size of your kale leaves.

BAKED KALE CHIPS
 
1 Bunch Kale
1 Tablespoon Olive Oil
1 Teaspoon Seasoned Salt
 
 
Preheat oven to 350 degrees.  Line a non-insulated cookie sheet with parchment paper.
 
 
With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt.
 
Bake until the edges brown but are not burnt, 10 to 15 minutes.

Here are my suggestions:
Remember that the leaves will shrink so if you decide to use more salt than recommended they may be a little salty!
 
I use sea salt but experiment with different spices & find what you like.

Salisbury Farmer's Market Opens

I'm back.......

For some reason every time I try to log in to update it says my password is incorrect, then I lock myself out & have to reset.  I have FINALLY been able to log in & post all of the old newsletter for March & April.  Sorry for any inconvenience. The newsletters always post on Facebook if you miss them though!


Well, I can hardly believe that the Market starts back tomorrow.  I am excited to see all of my customers & friends tomorrow in Salisbury but I'm going to miss having my Friday nights free from egg washing, packing orders, & everything else we do to prepare for the Markets.

The Davidson Farmer's Market has been going on for 2 weeks now.  I have been there helping Lee out for the past 2 weeks.  It was great to catch up with everyone there that I haven't seen in 3 years since I have been at the Salisbury Market.

Don't forget that the Salisbury Farmer's Market has moved to a temporary location.  We are located in the former Wrenn House parking lot.  The physical address is 115 S Jackson Street Salisbury, NC.  When coming into the paring lot I will be on the left.

Happy Friday!!!

 

 

Hard to believe another week has come and gone and April is nearly half gone.  We put our first batch of chickens out on pasture Wednesday and they hopefully survived their first spring downpour last night. 

 

Thanks again to everyone that fell for my pigfish story last week.  It's always fun to catch you off guard from time to time.  Have a great weekend.

WTF News- April 5, 2013


Happy Friday!!!

 

We really have enjoyed the bit of warm weather that has been teasing us lately.  The boys have been out on spring break this week and working really hard at helping around the farm so I decided to reward them with an afternoon fishing trip to our pond.  I'd noticed that our boar Arnold has been spending quite some time bathing in the shallow end of the pond recently, even despite the cold weather we've had.  It was almost as though something really had his attention but being busy with other things I really didn't pay it any mind and just wrote it up to having a stupid boar. Well after fishing for a couple hours we'd only managed a few small bream and a small bass.  Then all of a sudden Rosty hooked something that fought like mad.  It was really weird as each time it would get near the shore if would just dive right into the mud along the bank and root its way along.  This was quite the fight for his little fishing rod and ended up taking several minutes to land.  It finally got tired and gave up the fight and you can't imagine the surprise on our faces when we saw the fish up close for the first time (see pic below).  So I ended up putting 2 & 2 together and now it's apparent why Arnold was so eager to go swimming despite the freezing temps. We weren't sure what it would be like but we took it home, found a good Paula Deen recipe, & fried it up for supper and man that was good- tasted allot like bacon for some reason......

Happy Easter

 

Or is it Happy Noreaster????   Here's a run down of what's happening on the farm- it's been cold.  That little blast of warm weather a couple weeks ago really put us in the mood for spring.  Hopefully it'll be here soon.   

 

 

 

We'll be back at the Davidson Farmers Market this Saturday 9-noon.  This is an additional market day since we had an extra saturday in the month.   Summer market begins in April!!!!

Wild Turkey Farms' Spring 2013 CSA
 
Email us if you are interested in participating- Space is limited so the sooner you contact us the better.
 
We expect to start around April 18 (perhaps a week sooner or later depending on the readiness of the crops) and run for 15 weeks (mid-late July).  
 
Planned (but not limited to) Veggie Crops-
Early stuff- lettuces, onions, spinach, turnips, radishes, broccoli, cauliflower, brussel sprouts, beets, 
Mid season stuff- potatoes, carrots, green beans, squash, zucchini, cukes
Later stuff- tomatoes, sweet corn, okra, watermelons, cantaloupes
 
Meats will include a farmer's choice variety of our Beef, Pork, Chicken, & Lamb
 
Each egg option will include 1 dozen of our free range brown eggs.  Multiple egg options may be purchased for more eggs.  The Half Egg Option will include 1/2 dozen of our eggs each week.
 
Veggies- $15/week x 15 weeks = $225
 
Small Meat Option- $11/week (+ 2% food tax)= $168.30
 
Large Meat Option- $25/week (+2% food tax) = $382.50
 
Egg Option- $3.75/week= $56.25
Half Egg Option $2/ week = $30 
 
Delivery may be available to certain areas for a small charge, depending on CSA participation in that area
 
 
You will be responsible for picking up each week at Wild Turkey Farms 1015 Old Cress Rd Salisbury NC or making arrangements for the pick up of your share. Any shares not able to be picked up will be donated to Main St Missions in China Grove for distribution to locally needy families.

Happy St Patrick's Day Weekend!

 

Full Steam Ahead!!!!  We're rocking and a rolling along as the garden fills up with veggies and the pastures start greening up.  Sorry for the short (and late) newsletter but yesterday ended late & today started early so somehow the newsletter slipped my mind until a friend of mine from Idaho called to ask if I was still alive since he didn't get his newsletter.  It's good to know your friends are looking out for you even if they are 2000 miles away. 

 

 

 

We'll be back at the Davidson Farmers Market this Saturday 9-noon.  There will be an additional DFM March 31 9-noon since we had an extra saturday in the month.   Then summer market begins in April!!!!
