We will be back at both markets tomorrow and it looks as though the rain may have fizzled out - YEAH!  

 

We're reloaded on beef so now is a great time to stock up.  We also have just a few turkeys (16-20lbs) in the freezer so this is your last chance to get a WTF free range turkey for Christmas or just to enjoy before next Thanksgiving.    

 

Unfortunately the short days have sent our hens into molt so still- NO EGGS....  Bummer, but hopefully they'll pick up soon.

Cooking WTF Style- Lamb Meatballs

I have decided to edge out of my comfort zone a little bit.  If you have ever asked me at the Farmer's Market about how I cook lamb or how to cook lamb my normal response is "I let my husband do it!"

 

 

I decided I needed to venture out & actually try to cook some lamb on my own.  I had a customer a few weeks ago who was buying ground lamb to make meatballs so I thought I'll try that.

 

The recipe that I used to help me get started with the meatballs can be found here.

 

I used a pack of ground lamb, mixed in some bread crumbs (leftover baguette from Chef Charles at the Davidson Farmer's Market), 1 egg, beaten, dried parsley, marjoram, salt & pepper.  I combined all the ingredients by hand & put it in the refrigerator for about 20 minutes (not 1 hour like suggested in the recipe).  Next, I rolled into balls.

 

As suggested by the recipe I cooked the meatballs in butter (YES, a whole stick of butter) & added the 1 Tbsp of Olive Oil. 

 

 

And here are my lamb meatballs.

 

 

According to the Farmer Lee.....I did overcook the meatballs just a little bit.  But the lamb shoulder chops that I cooked in all the leftover butter he said those were just right!

Last Turkey Post

 

I hope you all had a wonderful Thanksgiving!!  The WTF family sure did.

 

One thing I was really looking forward to this year was using the turkey carcass to make stock.  I have been using our chicken backs this year to make stock & I thought the turkey would be fun to try.

 

Last week I got an email newsletter that included a recipe for Next-Day Turkey Soup.  I did some tweaking to the recipe & this is what I came up with:

 

 Turkey Soup

1 leftover turkey carcass

Water

 Sliced carrots

 Chopped onion

Sliced celery

 Garlic, minced

Salt & pepper to taste

Dried Parsley

 

Place carcass & water in stock pot & bring to a boil.  Reduce heat, cover & simmer for 1 1/2 hours.  Remove carcass.

 Remove meat from bones & set aside.

 

 

 Discard bones, then strain broth & skim fat.

 

 

 Add carrots, onion, celery, garlic, salt & pepper & simmer for 30-45 minutes or until vegetables are tender.

 

 

 Add parsley & heat through.

 

The original recipe calls for adding cubed turkey meat but I left some meat on the carcass so there was no need to add extra.

Step 6. Relax & have a glass of wine

Step 9. Hunt for meat thermometer

Step 10. Glass yourself another pour of wine

Step 11. Bake the wine for 4 hours

Step 12. Take the oven out of the turkey

Step 13. Tet the sable

Step 14. Grab another wottle of bine

Step 15. Turk the carvey!

The weather looks COLD so bundle up and come see us at the markets in the morning.  

 

TOO COLD???  Well, how about I tempt you with BACON!!!  We will be restocked on a limited quantity of hickory smoked bacon, smoked chops, smoked jowl bacon, smoked hocks, smoked polish, and maple link sausages.  Stock up for your holiday meals since this will likely be the last of the bacon for the year.

- prices are as follows- (these include all taxes )

        large turkey (14.5lbs or more) $95 ea

        Medium turkey (under14.5lbs) $75 ea

     

 

- payment must be made in full - should you be upgraded or down graded in size the balance or refund of $20 will be due/made at pick up.  (credit card payments will include a $3 fee)

WTF News- November 7, 2014

Happy Friday

 

This year has flown by like no other that I can remember.  Everytime I get caught up on my "to do list" it seems as though I blink and I'm magically 2 months behind again.  It has been that way especially with turkeys this year.  I hope you all will forgive me for being later than normal on getting out the turkey info. 

 

By the way- for those of you interested in turkeys, somewhere around 3pm today is looking especially "fowl".

As I have mentioned before we have been very lucky to meet a lot of different people along the way.  Whether they be chefs, writers, artist or customers.

 

It's always a lot of fun when the WTF farmers get to participate in events away from the farm (& at the farm too).

Turkey Info

Turkey Details- Do Not Reply To This Email - It Is NOT Time To Order Yet

 

Hard to believe that it's that time of year again but it is.  It's been another rough year on turkeys here  and though we had plans to raise lots of birds this year, we are now at just a fraction of those.  Fortunately, it looks as though I've got a friend that is going to help us out with some birds to help make sure everyone that wants a turkey will have one.  His are all natural and pasture raised, just like our birds and he's been at it as long as we have so we're confident on his ability to produce a high quality bird.

 

Here are the details so look over and decide if you want to get a turkey this year.

 

-WE WILL SEND OUT THE TURKEY ORDERING EMAIL NEXT WEEK.  You must reply to THAT EMAIL to get a turkey.  Turkeys will be filled based on "first come, first serve" to that email until they have all been spoken for.

 

- we anticipate this years turkeys will be about 15-17lbs on average

 

- if you have a size request (ie bigger bird or smaller bird) we'll do the best to match you up with what's available

 

- this year we plan to have birds available for pick up at the Davidson and Salisbury farmers markets on the Saturday before Thanksgiving (11/22) - We will have a Charlotte pick up Saturday afternoon

 

-due to the limited number of birds we may have to limit everyone to 1 bird- if you would like a second bird please let us know and we will do our best to accommodate that request

 

- price is $5.99/lb

 

- as usual we require a $40 deposit be made - balance will be due at pick up
