Cooking WTF Style- Meatballs

 
I have been trying to venture out some & cook a few "new" recipes instead of our tried & true recipes.
 
Ground beef is something I hardly EVER cook.  While a lot of people use it for tacos I use WTF chorizo or some people use it in spaghetti/lasagna I use WTF Hot Italian or Zesty Italian sausage.
 
I do use it for meatloaf but the kids claim they don't like meatloaf so I decided to modify the meatloaf recipe into meatballs....tricky of me!!
 
So the WTF version of BBQ Meatballs starts with a package of WTF ground beef.



We also need cracker crumbs, milk, eggs & salt.
 
 
If you want you can make your own BBQ be my guest.  I happened to have some Sweet Baby Rays in the pantry so I cheated this time & used that instead.
 
Here is the final product.  It's hard to take a good picture of meatballs so this is an oven shot!!
 
 
 
 
 
 
BBQ Meatballs
 
1-lb. ground beef
1 cup cracker crumbs
1/4 cup milk
2 eggs
3/4 teaspoon salt
 
*BBQ Sauce*
 
1-Preheat oven to 350 degrees
 
2-Mix ground beef, cracker crumbs, milk, eggs & salt in a large bowl.  Roll out meatballs & place on baking sheet with a rim.  Pour BBQ sauce over meatballs.
 
3- Bake for 45-minutes or until meatballs are no longer pink in the center.

Vendor Update:

 

 


We hear from David Correll of Correll farm that they will have a huge assortment of our homegrown tomatoes, including Tiger Stripes, Pink Brandywine, Cherokee Purple, Mr Stripey,Reds, Carolina Gold, Roma, Nyagous, Peach Tomatoes, Green (for Frying), and Assorted Cherry and Grapes. 

 

They will also have a wide array of peppers including Green, Red, White, and Purple Bell Peppers. Hot peppers including Jalapeno, Cayenne, and Hot Banana, and Sweet Peppers such as Cubanelle, Pablano, and Sweet Banana.

Eggplant is also in full swing, they will have 3 different kinds, as well as tomatillos.

 

To top it all off, they will have bi-color sweet corn, as well as sweet juicy watermelons!

 

What's at the Market:

Meat and Egg: Fading D Farm will be offering their delicious Buffalo meat - if you haven't yet tried this lean red meat - pick some up tomorrow! Several vendors will be selling eggs. Wild Turkey Farms will not be at the market this Saturday.

 

Seafood: OBX Seafood will have Flounder Filets, Whole Flounder, Grouper, Mahi Mahi, Red Snapper, Pink Snapper, Yellow Fin Tuna, Black Sea Bass, Salmon (Scotland), Halibut (Nova Scotia), Lg Sea Scallops, Fresh Large Shrimp, Crab Cakes (Frozen from Mattamuskeet Crab & Oyster House), and Little Neck Clams.

Results of First Market Chef Competition

This past Saturday at the Salisbury Farmer's Market was our first installment of the Market Chef Competition.
 
 
It was a lot of fun!!
There were a few kinks that had to be worked out in the beginning but in the end it turned out great & I think our participants had a blast!
 
I've even heard a few other people say they are thinking of signing up to do the next round of Market Chef.
 
 
To keep it interesting we'll change up the rules a tad but it will still be a lot of fun for all involved.
 
Since WTF donated Sweet Italian Sausage to be used in the competition Domisty got to be the "Surprise Judge."

Bacon & Brews Cruise In

 
We had the opportunity to volunteer with the Piedmont Culinary Guild at the Inaugural Bacon & Brews Cruise-In.
 
There were 20 chefs & 5 Breweries competing.  The chefs all had to use bacon in their dishes.  They varied from sweet to savory.  All the ones I tried were DELICIOUS!!!
 Chef Craig Diehl was also there doing a whole hog butchery demonstration.
 
WTF was there working the T-shirt booth & selling Cheerwine & Uncle Scott's Root Beer.
 
I took a few pictures before the event started but because we were working I didn't get out much during the event.
 
It was a great event & they have already started planing next years event!

Market Chef Competition at Salisbury Farmer's Market

Do you enjoy "heated" competition? Are you brave in the kitchen? Do you have cooking skills? Can you create gourmet dishes in a pinch? If so, the Market Chef Competition is for you! This market season, the Rowan-Salisbury Farmers' Market will host its first ever cooking competition. There will be three days of competition. At the end of the competition, the winner will be crowned, "The Best Market Chef". The first round will be held July 19 with four competitors. The winner will continue on to the next round, competing against a new set of challengers.
 
There will be twists and turns at every competition. Chefs will handle local mystery ingredients, time/money limitations, and new judges with each round. This competition will be similar to Food Television's popular shows, "Cut Throat Kitchen", "Iron Chef", and "Chopped". Contestants need to bring their "A-Game" if they wish to make the final round!
 
Seasonal ingredients from the Farmers' Market will be the contestants' muse. Each ingredient provided has to be used in the dishes that the chefs create. Failure to do this will cause them to be "sliced".
 
 Presentation is important!
The contestants can also have an assistant of their choosing.
 They must bring their own knives, spices, oil, unopened pantry items, pots, pans, etc.
 Pots and pans will have to be brought to the Cooperative Extension office on the Monday before the competition to be washed and sanitized.
 
To compete, contestants must fill out the application and deliver to the Cooperative Extension office at 2727-A Old Concord Rd., Salisbury, NC 28146.
 
There is a $10.00 fee for contestants.
 
Because of limited space, fees will be collected after the contestants are selected (contestants are selected on a first come first served basis).
 
Applications are due no later than Friday, July 11th.
The dates to compete are July 19, August 9, and September 6.
 
The competition will be held at 10 am at the Rowan-Salisbury Farmers' Market, 115 S. Jackson St., Salisbury.
 
So, if you feel that you have what it takes to be the first Rowan-Salisbury Farmers' Market, "Market Chef", bring it on!

Sausage Quiche WTF Style

I know you think I haven't been cooking lately but I have.....
 
I have taken lots of pictures over the past few weeks of our food but there is only so much I can say about grilling ribs or making meatballs.  Although, I probably will share the meatball recipe in another post....a post where I remember to take pictures of said meatballs!
 
Todays recipe is Sausage Quiche.
 
WTF sells bulk breakfast sausage in mild, mild extra sage, hot & maple.
 
I used mild breakfast sausage in the following recipe.
 
It's a really simple recipe & of course I had to add my own spin on things.  I had some broccoli from the garden that I had frozen.  I chopped it up & added it to the mixture.
 
The other variation from the recipe is that I baked the pie shell in the oven for about 3-4 minutes then poked a few holes in it & put it back in the oven for another 5 minutes.
 
First, we are going to brown the sausage & drain.
WTF Mild Breakfast Sausage

WTF Jumbo Eggs
 
Then combine the eggs, milk, salt & pepper & stir in the sausage.
(this is where you would also add in your extra things like broccoli or mushrooms if you choose)



Place part of the cheese mixture on the pie crust that you preheated
(see my comment above), pour the egg/sausage mixture into the pie shell & cover with the remaining cheese.

 
 
After baking at 350 degrees for 50 minutes. 
 Enjoy!!!

Cooking From the Farmer's Market- Peppers

GREEN SALSA
 
 
The past 3 weeks I have loaded up on peppers at the Farmer's Market. As we have learned I'm not good at following recipes so my recipe for Green Salsa includes what I have on hand.  This week it was:
Tomatillas
Jalepenos
Cilantro
Lime Juice
Garlic
 
Be creative!
If you don't have cilantro don't use it.  If you have some other peppers throw them in there, do it.
 
I have made Green Salsa 3 weeks in a row & each time was a different "recipe" based on what I had gotten at the Farmer's Market or had at home.
 
 
I started with a variety of peppers



Tomatillas
- the husk need to be removed-




 Chop all the peppers & place on a baking sheet.
I also added garlic.

 
 
Then place in the oven under the broiler.
I like mine to get a nice char to them.





 Put in a blender with anything else you want to add such as lime juice or cilantro.
 
 
 
 
And there you have Green Salsa!
